Lemon butter

Lemons - Glorious Lemons!

It's May and our lemon tree is full not only of lemons but of buds, ensuring we will have beautiful zesty lemons for months to come!

So today I'm making lemon butter in the Thermomix (a present from my darling husband!).

Ingredients:

Juice of 1 large lemon (I like it zesty so I use two)
110grams of caster sugar
80grams butter
2eggs

Method:

Put all the ingredients into the Thermomix with butterfly insert, speed 3, 80 degrees and 8 minutes later you have the most delicious lemon butter!

If you don't have a Thermomix you can do this Bain Marie style on your stove, putting all the ingredients into a heat proof bowl, on a gentle heat (so you don't make scrabbled eggs!).

Pour into sterilised jars and seal. Keep stored in the fridge for up to 4 weeks.

This is also beautiful with limes too!

Our lemon tree is in our chicken run so it gets a lot of natural fertiliser!
