Thai Chicken Laksa


My husband loves laksa! Whenever he has a cold he craves that spicy Thai soup to clear out his nose! 

I have never eaten laksa before, let alone made it. But after this cold of his wouldn’t leave him, I thought he would really appreciate it.

So I scoured the internet and took bits and pieces of recipes until I created a recipe that ended up being so beautiful, with a  warm spice that was delightful!

So here it is, my Thai Chicken Laksa

Ingredients:

20mls olive oil
3 cloves crushed garlic
1 teaspoon grated ginger
2 chicken breasts cubed
2 tablespoons Thai laksa paste
Juice of 1 lime
1 teaspoon dried chilli flakes
2 tablespoons soy sauce
1 tablespoons oyster sauce
1 400gram can coconut milk
500 grams of water
A handful of snow peas
3 spring onions chopped into batons

Method:

Place olive oil, garlic and ginger into a pot and gently cook for 2 minutes. Thermomix - 100 degrees, 2 minutes, gentle.

Add the cubed chicken breast, laksa paste, lime juice, chilli flakes, soy and oyster sauce and sauté for 3 minutes on a high heat. Thermomix - 100 degrees, Reverse, 3 minutes, gentle.

Then add the coconut milk, water and vegetables and simmer for 15 minutes or until chicken is cooked. Thermomix – 100 degrees, 15 minutes, Reverse, gentle.

Serve with fresh chopped chilli, coriander and rice noodles (all optional).
